Millets are most commonly found in the form of pearled and hulled varieties. Millets are nutty-tasting grains with a moderately sweet flavor. Millets, compared to rice, are high in protein, dietary fiber, electricity, and minerals. These millets have a wide range of high meal prices, but their consumption has decreased due to the necessity for standardized processing procedures to compete with first-class cereals. As a result, an endeavor was undertaken to increase the use of small millets in well-known ingredients that could gain widespread acceptance under the label of ‘HEALTH FOODS.’ Small millet-based completely price launched products, such as traditional recipes, bread items, pasta items, flaked and popped items on the spontaneous meals mixtures, had been enhanced and standardized. To increase the use of small millets, the products that are traditionally arranged by farmers through the use of cereals have been replaced.
