Millets are most commonly found in the form of pearled and hulled varieties. Millets are nutty-tasting grains with a moderately sweet flavor. Millets, compared to rice, are high in protein, dietary fiber, electricity, and minerals. These millets have a wide range of high meal prices, but their consumption has decreased due to the necessity for standardized processing procedures to compete with first-class cereals. As a result, an endeavor was undertaken to increase the use of small millets in well-known ingredients that could gain widespread acceptance under the label of ‘HEALTH FOODS.’ Small millet-based completely price launched products, such as traditional recipes, bread items, pasta items, flaked and popped items on the spontaneous meals mixtures, had been enhanced and standardized.
